Our story

Simple, traditional, lovingly prepared, and utterly authentic. The step from Calabria, Italy to Sydney, Australia is a surprisingly small step in kitchen miles. The recipes passed through generations are the same and cooking isn’t just something Italians do to survive; it’s a way of life. Having been brought up and immersed in a culture that celebrates the act of cooking and eating every day, it is only natural that we share these traditions. Pizza was made for sharing and mamma knew that the soft pillowy pizza dough with oozy strands of mozzarella and sweetness of the homemade passata, was enough to make the whole family smile.

Since inception in 2016, RDM Pizza has been building on its Italian-Australian heritage to become a market leader in authentic pizza products. From our award-winning dough to the highest quality pizza ovens, to speciality products we’ve developed to satisfy gaps in the market. We are passionate at our core. Lovingly made, all our pizza products are made by hand in our Sydney factory using ethically sourced, premium Aussie ingredients to our authentic family recipe.

Riccardo Moretti

With innate respect for tradition, Riccardo wanted to redefine industry values and challenge the rampant mass-production and commercialised products in the pizza foodservice industry that was pervasive at the time.

The brand’s original business strategy and blueprint for authentic and traditional products was a natural evolution of his experience working in pizza sections and owning and running his own restaurant, as much as it was growing up in an Italian home.

Led and inspired by Italian tradition, his childhood up-bringing and culture and his experience as an award winning pizzaiolo, these disciplines are the pillars of RDM today – quality, consistency, love, and care. This sense of pride, authenticity, and intention for transparency, sharing our knowledge and experience to positively affect the industry and enable fast growth in our customers’ businesses, is at our core.

As market leader, RDM Pizza has instituted many firsts in snap frozen dough, manufacturing, packaging, and training and has led to RDM Pizza being a highly visible and successful Australian brand.  We exist to be an end-end solution for those seeking quality in their pizza needs. Our Journey

RDM founder and director, Riccardo Moretti is born to Italian-Calabrian migrants in Western Sydney. He would spend his childhood on their farm and watching his mamma make meals that she had been taught when in Italy. Food that was made lovingly from scratch…pizza dough that was kneaded and stretched, their own passata and fresh ingredients from the family farm, and then cooked in their woodfire pizza oven at home. These meals were always shared with open hearts, with family and friends and his mamma Maria was instilling in him tradition and the ‘old way’.

Riccardo was 15, and his grand dream was to become an aircraft engineer. Needing money to pursue studies, he decided to learn the art of pizza and earn some money to be able to pursue his engineering dreams. He started working at Al Forno, where he was taken under the owner’s wing, and began making pizza. Riccardo moved to waiting tables at Criniti’s. He was itching to get into the pizzeria and eventually convinced the owner to give him a go in the pizzeria. His love and passion for pizza was developing.

Riccardo was running Pizzeria Belluci in La Piazza at Bankstown Sports Club – a Sydney institution. La Piazza gained a reputation as one of the best pizzerias in Sydney and people would queue for up to two hours on the weekend to eat the famous pizza. With an average of 4000 pizzas a week, Riccardo had to learn how to make pizzas quickly and with the same high quality and consistency every single time. This led to self-learning new ways to open the dough, to try and open it faster and faster and this led to learning the art of dough acrobatics. He set himself the goal of snap freezing dough and achieving the same taste and texture as if it had been made fresh. Once he had endlessly trialled and tested the dough to achieve consistency, he then worked on extending the shelf- life. This made a vast difference to increasing efficiencies in the kitchen, especially when there was a high reputation to uphold and with such large quantities coming out of the pizzeria.

Best traditional pizzaiolo. From his mamma’s recipe that had been handed down through the family, Riccardo took it and sought out premium Australian ingredients and worked on perfecting his recipe. He knew it was the exceptional and made in the artisan Italian way.

Quietly confident he had a first-class dough, Riccardo competed in the prestigious Dairy Farmer’s Best of the Best Pizza Challenge and won Best Traditional Pizza Maker in Australia at age 16. His dough received a complete score – the judges couldn’t fault his dough. It was fluffy but not filling, it was light but not full of yeast. It was perfect.

Best traditional pizzaiolo, second year in a row. He won the Best of the Best Pizza Challenge for the Best Traditional Pizza Maker in Australia for the second time, at age 17, and Riccardo knew that this was what he wanted to do. He was a pizza artisan.

Riccardo also won a place on the Australian Pizza Team for Dough Acrobatics as part of the International Championship tour.

After owning and operating Italian restaurants between 2009 and 2016, Riccardo knew he could fill a gap in the market with his premium product. RDM Pizza Australia is born.

RDM began focusing on providing businesses and retailers with a high quality and ready-to-use solution with pizza bases and snap frozen dough balls. The same dough that had won awards at The Best of the Best Pizza Challenge was now accessible to everyone.

RDM Pizza - when quality and consistency matters

The business quickly outgrew premises and moved to Marrickville, requiring two factories as the company expands and grows nationally and internationally.

Off the back of outstanding growth, RDM Pizza will move to first-class manufacturing facility in Gregory Hills. With a strong focus on sustainability, product innovation supporting the industry and continuing our vision of being an end-end premium pizza solution for our customers in Australia and internationally, RDM is excited for this next stage.
