SLOW FERMENTATION PROCESS
Our award-winning pizza dough is made by hand using a slow fermentation process, with our special recipe dough rested and a marginal amount of yeast that’s activated before mixing (so it isn’t activating in your gut!). During a slow fermentation process, the gluten proteins break down. This process also allows the flavours to develop and achieve a light and fluffy dough. This means a light and easy-to-digest pizza just like you enjoy in Italy – delicious and filling, without that heavy bloated feeling.
ETHICALLY SOURCED INGREDIENTS
All our ingredients are 100% ethically sourced (and provenance sourced for where it is important), and we choose local wherever possible to support our Aussie farmers. We’re proud to say our dough uses 100% premium Australian ingredients and no additives or preservatives. You’ll taste the difference with our premium ingredients. From the finest flour, to quality soft mozzarella made from whole milk, and the highest quality Italian sauce (just the way Nonna makes it).
BETTER FOR YOU
Our dough uses a high protein flour and is also a great source of fibre. From the way that we produce and locally manufacture our products, to the carefully selected quality ingredients, original mother ‘poolish’, slow fermentation process to break down the gluten proteins, pre-activated yeast, and a promise of no preservatives or additives in our dough, we’re a healthier choice with quality that you can taste. We do things with ‘buon senso’ (common sense) and maintain our customs with pride.
